Winemaking:
Manual and mechanical harvesting of the grapes with soft pressing and fermentation without maceration at a controlled temperature below 20 ° C and in the presence of selected yeasts. Storage takes place in steel tanks at controlled temperatures below 20 ° C, trying to protect the wine with nitrogen to avoid the oxidative effect of the air. Stabilisation and bottling are carried out cold using an isobaric filler.
