In 1973, Michel Redde was the first in the name Pouilly Fumé and Sancerre to produce a so-called 'special' cuvée he called Majorum.
To pay tribute, starting from the 2017 vintage, the packaging of the bottle will be changed looking for a more artistic side. Each bottle will be waxed and handwritten with a chalk marker as an artist would sign his works. With a
straw yellow color, the palate releases fruity and floral notes, which blend well with each other, highlighting aromas of almond, peach and chamomile flowers. In the mouth it is full and round, with a very persistent finish.
Winemaking:
vinified and aged in wooden vats and large barrels, it remains for 10/12 months on the lees fine to follow then 4-6 months in steel stainless steel. Alcoholic fermentation takes place at a controlled temperature (18° - 20°C).
Serving temperature: serve at about 13° after oxygenation in a jug in order to appreciate this nectar with unparalleled finesse and concentration.
Pairings: it can accompany dishes such as foie gras, grilled lobster, fish dishes with finely elaborate sauce and even a hot chocolate dessert.
Ageing: suitable for an aging of at least 15/20 years.
