The vines are over 50 years old, producing low yields and very concentrated flavours. After a traditional maceration and fermentation, the wine in oak barrels to give it an enticing complexity and richness. Tannins are more pronounced than with regular CruBeaujolais wines, but very ripe and well- integrated. The finish is long and complex - outstanding!
The harvest is entirely by hand in order to take extra care in sorting the grapes. The grapes are transported to the winery with the greatest caution and then they are pressed directly. The slow fermentation takes place in stainless steel tanks at controlled, low temperatures. The wine is then aged for 12 months in oak barrels.
