    Tasting Note: 

    Exciting aromas bursting with red fruit mingled with garrigue backed by notes of pepper, graphite and chocolate. A supple fresh finish conferring great elegance. Though a delicate wine it still has the rich taste of Languedoc wines.

     

    Winemaking:

    Vinification per vineyard block. Light extraction, mainly by cap-punching. Matured in vats then aged in demi-muids.

    Production: 15 000 bottles. 

    Soil:
    Mainly shallow Milocene era limestone and basalt scree in the Pezenas appellation area (Languedoc).

    Grapevines:
    organic farming, organic compost, green manure, soil tillage, low natural yields (35hl/ha), manual harvesting.
